Ingredients

  • 1 large onion diced

  • 1 tbsp garlic ginger paste (or 2 cloves minced with 1 thumb size piece minced)

  • 1/2 tsp chilli flakes

  • 1/2 tsp cumin seeds

  • 1/2 tsp coriander seeds

  • 1/2 tsp black mustard seeds

  • 2 tsp tumeric

  • 1 tsp garam masala

  • 200 g dried red lentils

  • 400 ml coconut milk

  • 400 ml chopped tomatoes

  • 500 ml stock (vegetable/chicken)

  • 80 g spinach

  • lemon juice

Directions

  • Dry roast chilli flakes, cumin, coriander, mustard seeds til fragrant. Then grind into powder
  • Fry onion gently in 2 tbsp vegetable oil for 5-10 mins, add garlic and ginger, 1 minute, add dry spices, 1 minute
  • Add lentils and all wet ingredients (tomato/coconut milk/stock), then simmer for 20 minutes stirring often
  • Add spinach, allow to wilt, then season to taste with salt and lemon juice and serve
