Creamy Red Lentil Dal

Ingredients
1 large onion diced
1 tbsp garlic ginger paste (or 2 cloves minced with 1 thumb size piece minced)
1/2 tsp chilli flakes
1/2 tsp cumin seeds
1/2 tsp coriander seeds
1/2 tsp black mustard seeds
2 tsp tumeric
1 tsp garam masala
200 g dried red lentils
400 ml coconut milk
400 ml chopped tomatoes
500 ml stock (vegetable/chicken)
80 g spinach
lemon juice
Directions
- Dry roast chilli flakes, cumin, coriander, mustard seeds til fragrant. Then grind into powder
 - Fry onion gently in 2 tbsp vegetable oil for 5-10 mins, add garlic and ginger, 1 minute, add dry spices, 1 minute
 - Add lentils and all wet ingredients (tomato/coconut milk/stock), then simmer for 20 minutes stirring often
 - Add spinach, allow to wilt, then season to taste with salt and lemon juice and serve
